OSTRICH MEAT SALSA DIP

 

1 pound ground ostrich meat

1 16 oz. jar salsa

1/2 pound Velveeta cheese

 

Brown ground ostrich meat in 3 tbs. olive oil.  Place in microwaveable casserole dish.  Add Velveeta cheese and place in microwave until almost melted.  Remove and add salsa and mix well.  Serve with tortilla chips, or put on top of chips and build a salad, adding sour cream, chopped tomatoes, shredded lettuce.

 

OSTRICH MEAT LOAF

2 beaten eggs

3/4 cup milk

23 cup dry bread crumbs

1/4 cup finely chopped onion

1 tbls. dried parsley

1 tsp. salt

1/2 tsp. basil or oregano

1 lb. ground ostrich meat

1/4 cup catsup

2 tbls. brown sugar

1 tsp. dry mustard

In a bowl mix eggs and milk; stir in bread crumbs, onion, parsley, salt, basil and 1/8 tsp black pepper.  Add meat; mix well. Place in a 8x4x2 loaf pan.

Bake in a 350 degree oven for 1 hour or until internal temperature is 160 degrees F.  In a bowl mix catsup, sugar, and mustard and spread over meat.  Bake for 10 min. more.  Let stand for 10 min. before serving.

OSTRICH ROAST IN A CROCK POT

2-3 lb. ostrich roast

1 med. onion

salt and pepper to taste

Place roast, onion, salt and pepper in a crock pot and cover with water.  Cook on high setting for approx. 1 hour or until internal temperature reaches 160 degrees F.  Slice against the grain very thin.  Enjoy in a bun with sauteed onions and peppers and mushrooms with Swiss cheese.  Or with mashed potatoes and gravy.  Make gravy out of the broth.
